formatges catalans Lactium<\/strong>, celebrada en Vic el 22 y 23 de mayo, y en la que ha participado La Bona Llet en el <em>TxisCorner<\/em> con la presencia de Anna Jubert, gerente y directora t\u00e9cnica de Allic, ha galardonado como Mejor Queso Catal\u00e1n Lactium 2021 el <strong>Glauco de la queser\u00eda Xauxa<\/strong>, adem\u00e1s de colocarse como <strong>mejor queso azul<\/strong>, de entre 250 tipos de queso presentados.<\/p><p>El premiado <strong>Glau<\/strong> es un queso cremoso, equilibrado, apto para todos los paladares y elaborado con leche cruda de vaca y ecol\u00f3gica, de pasta florida azul debido a la acci\u00f3n del <em>penicillium roqueforti<\/em> y piel natural. Le da una maduraci\u00f3n de 3 a 4 meses y se presenta en formato de cilindro de caras planas de 4 kg de peso, con una producci\u00f3n peque\u00f1a, de unos 350 litros a la semana. Es un queso intenso y complejo en aromas, tanto en su piel como en su pasta. Una de las claves que lo hacen muy especial es su textura, muy bien conseguida con un perfecto equilibrio entre mantecosa y cremosa. En boca es un queso potente, aunque muy elegante y pleno de matices con un conjunto gustativo muy ponderado capaz de satisfacer a los amantes de los quesos azules m\u00e1s penetrantes, y de seducir a los que son m\u00e1s reticentes a este tipo de quesos. De post gusto largo y persistente, es ideal para acompa\u00f1ar con vinos blancos que tengan una m\u00ednima intervenci\u00f3n (naturales o biodin\u00e1micos), y tambi\u00e9n con los dulces m\u00e1s cl\u00e1sicos, o con los ancestrales que ahora est\u00e1n de moda.<\/p><p>El Glauc se puede comprar en las principales queser\u00edas especializadas de Barcelona y Girona, y tambi\u00e9n directamente en Xauxa.<\/p><h6>\u00a0<\/h6><p><strong>Qui\u00e9nes son la Formatgeria Xauxa<\/strong><\/p><p>Al frente de esta queser\u00eda situada en Les Preses, un municipio de la comarca de la Garrotxa, est\u00e1 Paula Fonoll\u00e0 y su compa\u00f1ero, Albert Grabulosa. Los dos pusieron en marcha este proyecto en 2018. Compran la leche a Can Frigola, a Borgony\u00e0, Pla de l&#8217;Estany. Es una explotaci\u00f3n en r\u00e9gimen ecol\u00f3gico que hace una leche de gran calidad quesera. Ahora mismo tiene frisonas pero est\u00e1 haciendo cruzamientos con <em>Fleckvieh<\/em> y morena suiza.
